Zucchini Bread….Bob Weber’s Favorite

Picture 83 cups flour

3 cups sugar

1/2 teaspoon baking powder

1 1/2 teaspoons baking soda

1 teaspoon cinnamon

1 1/2 cups chopped nuts

1 1/2 teaspoons salt

4 eggs

4 teaspoons vanilla

1 1/2 cups vegetable oil

3 cups grated zucchini

Preheat oven to 350 degrees.

Grease and flour 2 9 x 5 x 3 inch loaf pans.

Mix all ingredients together in a large bowl beating well. Pour batter into pans.  Bake 1 hour or slightly longer, until toothpick inserted in center comes out clean.

Makes two or three loaves.
