Lori’s Scallops and Gruyere Cheese Appetizer

Picture 73 Tablespoons butter

1 lb bay scallops

2 teaspoons grated lemon peel

3 gloves of garlic, minced

3 tablespoons fresh chopped dill (1 1/2 tablespoons dry dill)

2 1/2 cups grated Gruyere cheese

1 cup mayonnaise

salt & pepper

Melba toast or toasted french bread slices

Melt butter.  Add scallops, garlic and lemon and cook until scallops are opaque. Stir constantly.  Add dill and cook for 1 minute.  Add shredded cheese, mayonnaise, salt and pepper.  Transfer to baking dish.  refrigerate until ready to serve.  Broil in oven 5 inches from heat, until lightly golden brown.
