1 cup sugar
1 teaspoon lemon juice
1 cup (2-3) mashed well ripened bananas
1 3/4 cup sifted flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped nuts
Cream shortening and sugar until fluffy. Add eggs to mixture and beat. Add lemon juice to the mashed bananas (my great grandma never used lemon juice, but I always do). Stir bananas and nuts into creamed mixture. Do not over stir. Sift together the dry ingredients. Stir dry ingredients into cream mixture just enough to mix. Pour into well greased loaf pan. Bake at 350 for one hour. Let stand for 10 minutes. Remove from pan and cool completely.
*Cook’s Note: Use electric mixer only when you beat or cream mixture. The remaining directions should be stirred by hand.
