1/4 cup chopped green onions
1 glove garlic minced
1 1/4 oz taco seasoning mix package
1 cup water
8 oz tomato sauce
4 oz tomato paste
1-14 oz white or yellow corn kernals
1 egg slightly beaten
2 cups lite sour cream
1/2 cup sliced black olives
10-12 flour tortillas halved
8 oz grated cheddar cheese
8 oz grated Monterey jack cheese
4 oz green chilies, drained
In a large skillet brown beef with onion and garlic. Drain. Stir in taco seasoning and water. Simmer 5 minutes, slightly thicken. Add tomato sauce and paste, and corn. Bring to a slight boil.
In a small bowl, combine egg, sour cream, chilis, and olives set aside.
Pour just enough meat sauce into 9×13 baking dish to cover bottom lightly. Arrange a 1/3 of tortillas over meat sauce, overlapping slightly. Cover with half of remaining meat sauce followed by half of the sour cream sauce. Sprinkle with a 1/4 of Cheddar cheese and Jack cheese. Repeat….tortillas, meat sauce, remaining sour cream sauce, cheddar and jack cheese. Cover last layer with tortillas and more cheese.
Bake in 350 for 35 minutes or until bubbly and lightly browned. Let stand 5 minutes before slicing. Accompany each serving with sliced tomatoes and other optional ingredients.
