Best Cheesecake Ever

Read all of the recipe before baking.  There are 3 parts crust, filling, and topping.  There is also an additional bake time at a higher degree. This is the best cheesecake ever.  Family and friends always request it!

9″ Spring Foam Pan- buttered

8″ Spring Foam Pan-buttered—add 10 minute baking time

CRUST

1 1/2 Graham crackers, crushed

1/4 cup sugar

1/2 teaspoon cinnamon

1/2 stick butter, room temperature

Mix into a fine crumble consistency.  Pat mixture firmly in buttered spring foam pan on the bottom and half way up the sides.

FILLING

4 eggs separated (beat egg whites until stiff) ( beat yolks until fluffy)

1 cup sugar

3-8 oz package cream cheese, room temperature

1 teaspoon vanilla

Cream together cream cheese, sugar and vanilla till smooth.  BEAT in yolks.  FOLD in stiff egg whites. Pour into prepared pan.

Bake 1 hour at 375.  It will crack and the center will still be a little wigglely (this is the thickest part of this cheesecake).  It should be firm.

Let COOL for 10 minutes.

TOPPING

16 oz sour cream

1 teaspoon vanilla

1/3 cup sugar

Cream together and pour over cheesecake and bake at 475 for 15 minutes.
