2/3 cup shortening
3/4 cup granulated sugar
1/4 teaspoon each of vanilla and almond extract
4 teaspoons milk
2 cups sifted all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
Cream shortening, sugar and vanilla together until smooth. Add egg and beat until combined. Mix in flour, baking powder and salt until fluffy. Beat in milk. Divide the dough in half. Cover each ball in plastic wrap and refrigerate for ½ hour.
Roll dough out and cut into shapes. Bake at 375 for 8-10 minutes. Cool on tray for 3-5 minutes then cool completely on wire rack before frosting. Yield 35-40 small cookies.
Sugar Cookie Frosting
2 cups powdered sugar
1/2 teaspoon pure vanilla extract
1 tablespoon of milk
Mix together until smooth. Add additional milk if necessary.
